You only need 3 ingredients and 15 minutes to bake this magic chocolate cake

I have been repeating this recipe for years and it has never failed me – not even once. This cake is the ideal choice for chocolate lover – stupid and intense, but not too sweet. From the bridal shower to New Year’s Eve, it’s perfect to celebrate with a group of close friends – and it’s especially great with a glass of water. Champagne.

Recipe: 15 minute chocolate cake

Have inspiration from “Italian Easy: Recipes from London’s River Cafe”

yields: 12 servings (or maybe 8, no judgment)
Baking time: 15 minutes


  • 1 pound chocolate with at least 70% cocoa solids, divided into pieces (I like Lindt.)
  • 2 1/2 avocado bars (I like Kerrygold.)
  • 6 eggs, organic if possible


  1. Preheat oven to 425°F.
  2. Generous butter a 10 inch spring pan and line the bottom with parchment. (Don’t have a spring-loaded pan? You can do this in a cake pan of the same size, but it will be harder to remove.)
  3. Place a medium saucepan of water to simmer. You will be whisking the eggs in the bowl above this water, so fill the bowl with water about half way through.
  4. In a large enough, microwave-safe bowl, melt the chocolate and butter in the microwave for 1 minute. Stir well, then microwave for 15 seconds until completely melted. (You can melt over a bowl of boiling water, if you want; but I’ve never done so and I’m not asking you to try.)
  5. Crack all the eggs into a bowl large enough to fit the pan of water. Place pan over water and whisk until eggs begin to thicken, about 1 minute or so.
  6. Remove the pan from the heat and beat the eggs for another 4-5 minutes, until the eggs are very light and bubbly.
  7. Meanwhile, pour hot water into the roasting pan.
  8. Fold half of the eggs into the chocolate mixture to combine, then fold the rest.
  9. Pour batter into your springform pan, then cover with lightly buttered foil.
  10. Bake for 5 minutes, then remove the foil and bake for another 10 minutes.
  11. Take everything out of the oven. The cake should have a little wobble in the center. Remove it from the roasting pan and let it cool completely.
  12. Open the lid and mash with confectioner’s sugar, or serve with whipped cream and fruit.
