This old-fashioned double-cake-wrapped Holiday ham, from the new cookbook Delicious on the head, is the joy when it is served. You can bake the ham a day in advance, let it cool, and refrigerate it. Then wrap it in pastry and bake again just before serving.

Holiday ham wrapped with cider glaze
- cup light brown sugar packing
- 5 tablespoons Dijon mustard, chia
- first (1½ to 2 lb) smoked boneless ham
- first (8 oz) crescent-shaped dough roll
- first large eggs, beaten
- 1 cup cider
- cup apple cider vinegar
- cup honey
- 1 teaspoon chili powder
- Pineapple and maraschino cherries for decoration
Arrange the rack in the middle of the oven; Preheat oven to 350°F. Line a sheet of parchment paper.
In a small bowl, whisk together sugar and ¼ cup mustard until combined.
Point the top of the ham diagonally in one direction, making cuts about 1 inch apart and ¼ inch deep; then score diagonally in the opposite direction. Brush the ham all over the meat with the mustard mixture. Place ham on prepared baking tray. Bake for 20 minutes or until golden brown and an instant-read thermometer inserted in the thickest part reaches 160°F.
On a clean work surface, spread the crescent roll dough into an intact sheet. Remove ham from oven. Use tongs to transfer the ham to the center of the dough. Wrap dough around ham for coverage; beat with eggs. Return the ham to the oven. Bake for 20-30 minutes or until crust is golden brown and flaky.
Meanwhile, in a medium saucepan, combine the cider, vinegar, honey, 1 tablespoon mustard, and paprika. Bring to a boil over medium-high heat. Reduce heat to medium-low; Simmer 10 minutes or until sauce is slightly reduced and thickened.
Transfer ham to a serving plate. Place a slice of pineapple on top of the ham. Hold a maraschino cherry in the center of the ring; fixed with toothpick to keep in place. Repeat to coat the ham with pineapple and cherries. Serve with cider yeast.
