Sookie St. James was lucky enough to keep her job. That’s where we said it. The famous Gilmore Girls character is loved by fans for her quirky personality and intense desire to take care of Rory and Lorelai Gilmore. Even so, her chosen profession might not have been the best choice. Sookie was a talented cook, but there were about a million reasons she should have been fired from the Independence Inn and a million more reasons she wasn’t a great business partner for Lorelai.
Sookie St. James was wasting food in an industry where margins are already razor thin
Restaurants, even those attached to successful inns, are difficult to manage because they operate on incredibly low profit margins. Corresponding waiting, the average full-service kitchen has a profit margin of just 3% to 5%. With such a small profit, wasting food could spell doom for the entire company.
Apparently nobody said it Sookie St James. Sookie tended to throw away her entire menu planned and cooked to make something she suddenly felt like making. She would throw away whole pots of food if she didn’t think the product met her needs. Most importantly, Sookie spent much of her workday experimenting with recipes using company merchandise. Sookie’s waste not only would have cost Sookie her job; it probably would have cost Mia the whole deal.
A real boss would have fired Sookie for not delegating
Sookie didn’t let anyone do her dishes. This is perfectly fine for a home cook or even a private chef. When you run a busy commercial kitchen, delegation is required to keep things running. Sookie refused to delegate to anyone at any time and for any reason.
Her controlling nature was highlighted when she was placed on bed rest, and Luke Danes stepped in to keep the Dragonfly Inn’s kitchen running. Not a single member of the kitchen staff had any idea what to do in Sookie’s absence. One has to wonder what they were even doing there.
For a chef, Sookie St. James wasn’t overly worried about safety in the kitchen
Aside from eating into profit margins and not keeping a handle on employees, Sookie was almost unconcerned about kitchen safety. The celebrated chef tossed kitchen towels onto open stovetops, left the stove on, and regularly ate from a spoon, which he then put back into the food. She fell often, bled just as profusely and required regular medical attention. She also didn’t pay much attention to the cleanliness of her canals.
Sookie might have been a great cook. Her meal could have been a revelation. Still, she was a terrible employee and probably would have been fired from any real kitchen. she was greater liability when she was a talent.
