Ina Garten and Erin French’s meatloaf recipes aren’t that different

Although they require different numbers of ingredients, French and Garten actually use very similar things to make their respective meatloaf. Some are even identical.
First the meat. Garten’s Meatloaf recipe calls for ground feed. For French’s Dad’s Meatloaf, she uses a combination of ground beef and ground beef.
Now to what’s up in the meatloaf. Both recipes call for similar ingredients. For example, where French shallots are used, Garten uses yellow onions. And where the Modern home cooking Author opts for store-bought breadcrumbs, French uses cubes.

Meanwhile, French’s meatloaf recipe doesn’t have any of these ingredients. Instead, she uses four things Garten’s meatloaf doesn’t have: carrots, pecorino cheese, Dijon mustard, and whole milk.

One of the main differences between garden meatloaf and French meatloaf is the topping. The Barefoot Contessa keeps it simple with an all-ketchup topping. She spreads it evenly on her meatloaf before popping it in the oven to bake.
French, on the other hand, makes what she calls “glaze” in her recipe. She stirs together brown sugar, ketchup, and Dijon mustard before spreading the mixture over her meatloaf.
Garten and French both warn against over-mixing meatloaf
After all, although their recipes differ in certain ways, they have one major thing in common. French’s meatloaf recipe and Garten’s meatloaf recipe include a note about overmixing.
Garten explains in her step-by-step instructions that it keeps the meatloaf from becoming too dense. She also explained it during an episode of Barefoot Contessa.
