“You can make great pancakes from scratch without frustration or disruption,” he said. “All you need are a few ingredients, a few basic tools, the science to put them together and, of course, an appetite.”
“At least four or five or 20 times a year I make large batches of my own pancake mix,” he said of dismissing the ingredients. After combining all-purpose flour, baking soda, baking soda, sugar, and kosher salt in a bowl, he shared that mixing is key.

“The vast majority of pancake deaths are due to overmixing,” he said, noting that this creates gluten. Also, “a lot of pancakes don’t realize they’re overdoing it.”

“If bubbles settle, don’t break but solidify, just slide under the edges and take a look underneath,” he said. “If you have a good color, a nice bronzed brown, just slide underneath and rotate as close to the surface as possible.”
